Pumpkin Bread

We have been on a pumpkin bread kick lately. Here is the recipe (very easy!)

3 c. sugar (we have been using natural cane sugar. I like brown sugar too!)
1 15 oz. can pumpkin
1/2 c oil (The original recipe calls for 1 cup of oil and no applesauce.)
1-1 1/2 cups applesauce (momma likes to cut the oil out or lessen it. She discovered while pregnant that it didn't give her indigestion when she cut the oil out. Lots of applesauce makes quick breads and muffins more moist!)
2/3 cups water
4 eggs
3 1/2 cups flour (we use fresh ground whole wheat)
1 T cinnamon
1 T nutmeg
2 tsp soda
1 1/2 tsp salt
1 c chocolate chips (or more!!!)
1/2 c walnuts (we use more than that too)

mix first 6 well and then add the rest. Bake at 350 for about an hour. It makes 3 small loaves.



Doesn't last long.......................
